Jaggery was brought to India by the Portuguese; it is more likely that it originated in the subcontinent. The Indian name for jaggery is gur and it is claimed that practitioners of Ayurveda medicine have been using it for 3,000 years. However, the name jaggery actually comes from the Portuguese word jagara. Jaggery is sugar in block form made from the juice of the sugarcane and sometimes from the sap of the date palm tree. Jaggery is made from the juice of sugarcane, which is heated to produce thick crystals. Jaggery is rich in many vital vitamins and minerals, allowing it to provide nourishment to every part of the body. The important health benefits of jaggery include its ability to cleanse your body, act as a digestive agent, sweeten your food in a healthy manner, and provide good amounts of minerals. Jaggery is a more complex form of carbohydrate than plain sugar, thus provides with warmth and energy without harming the health. Black salt, also known as saindhav, kala namak, or sanchal, is harvested on land, around volcanoes, though some say it was formed by ancient seas that dried up. It is harvested in Central India. It is black but turns pink when it is crushed has pungent smell and sulfurous odor. It has its rich dark colour due to iron and other essential minerals that it contains.
